Alkali

A substance that tests at higher than 7 on the pH scale. Alkali  are sometimes described as having a slightly soapy flavor and can be used to balance acids. Olives and baking soda are two of the few alkaline foods.

Al dente

Literally, "to the tooth"; refers to an item, such as pasta or vegetables, cooked until it is tender but still firm to the bite, not soft.

Albumen

The egg white. Make up about 70 percent of the egg and contains most of the protein in the egg.

A la minute

Literally "at the minute". A restaurant production approach in which dishes are not prepared until an order arrives in the kitchen.

A la carte

A menu in which the patron makes individual selections from various menu categories; each item is priced separately.

Aerobic Bacteria

Bacteria that require the presence of oxygen to function

Adulterated Food

Food that has been contaminated to the point that it is considered unfit for human consumption
